I did some research on the subject and found there are a variety of factors involved besides just performance and longevity.
To start with, there is an old saying that says "One man's trash is another man's treasure." It can be the quality of the finished product, such as exemplary workmanship or seconds because of some possible flaw. It can be the style of the handle, such as ridging
in the plastic for a better grip, conveniently placed curves for a better fit in your hand, or even an adjustable weight system that allows personal preferences. It can be the job the specific knives are intended for, such as filleting or chopping. It can be the durability of the blade, such as not easily chipping or bending. It can be the staying power of the blade's sharpness. It can be the durability of
the handle. It can be the ease of the cleaning process. It can be the reputation of the company making kitchen cutlery sets. It can be the reputation of some well known person that has been asked to use or demonstrate the kitchen cutlery set for endorsement purposes. And yes, the prestige of the market the manufacturer is trying to target will be factored in.
