"In Defense of Food: An Eater's Manifesto is the latest book from Michael Pollan. Its predecessor, "The Omnivore's Dilemma tackled the topic of America's skewed way of eating. Now Pollan moves from just discussing the Western diet to arming us with the tools to change it.

The American diet contains very little of what our great grandparents would even recognize as food. Even so-called health-conscious people, turn to 100 calorie snacks, products with Calcium or Vitamin C added, and sugar alternatives, which though they sound good in theory, they are not what nature intended.

It doesn't take much research or common sense to see the correspondence between our decreasingly natural diet and our dwindling health as a society. Pollen's book really got me thinking, and made me more than disgusted with my own eating habits. And I'm one of those people who would consider myself "health-conscious." Pollen's book begs the question, "What is the food in our food?"

When I set out to buy In Defense of Food: An Eater's Manifesto, I knew the state of nutrition in America wasn't good, but I never imagined it as bad as it was. The primary reason being our skewed mentality of what's food and what isn't. The scary part is that even the things we think we are doing well aren't all that swell.

The food industry has distorted the dietary truths our ancestors understood and complicated the simple process of eating. We know how to reduce food to the sum of its parts and can break it down to the specific nutrients, but are we losing something essential in the process?

We must re-adopt the natural eating patterns of our ancestors. I'm not saying it's easy, but being aware is the first step.
