Quick and Easy to Make Meatloaf Recipes

When you talk about good old fashioned comfort foods, meatloaf has to be near the top of the list. Not only is it quick and easy to make, it can also be very inexpensive and made with ingredients you already have in your kitchen. The recipe possibilities are endless. All you need is a ground meat such as beef, lamb, or pork and a good imagination and you can create an easy meal for you and your family. Just add mashed potatoes and gravy and a vegetable of your choosing, and you have a delicious home cooked meal that every one in your family will enjoy. With that said, here are some quick and easy meatloaf recipes that I hope you will try.
Easy Breezy Crock-Pot Meatloaf
What you need:
• 2 lbs lean ground beef
• 1 c Italian style dried bread crumbs
• 2 eggs
• 1 package dry onion soup mix
• 3/4 c ketchup
• 1/4 t pepper
What you do:
In a large bowl, combine beef, bread crumbs, eggs, soup mix, pepper and 1/2 c ketchup; form into loaf. Place loaf in slow cooker and spread remaining 1/4 c of ketchup on top of loaf. Cook, covered, for 8 hours on low.
Easy Meatloaf
What you need:
• 11/2 lbs ground chuck
• 1/2 c converted rice, uncooked
• 1 garlic clove, minced
• 1/2 c milk
• 3 T ketchup
• 1 T Worcestershire sauce
• 1/3 c onion, diced
• 2 eggs
• 1/2 t dry mustard
• 1/2 t salt
• 1/4 t black pepper
What you do:
Add all ingredients to a large bowl. Mix together thoroughly and shape into a loaf. Place in a loaf pan and cook, covered, for 1 hour in a 350 degree preheated oven. Uncover and cook for an additional 30 minutes.
Cheeseburger Meatloaf
What you need:
• 2 lbs ground beef
• 1 c sharp cheddar cheese, shredded
• 11/2 c Italian style bread crumbs
• 1/4 c green pepper, chopped
• 1/3 c celery, chopped
• 1/2 c onion, chopped
• 2 eggs, slightly beaten
• 6 oz can tomato paste
• 1 garlic clove, minced
• 1 t salt
• 1/4 t black pepper
• ketchup
What you do:
Preheat oven to 350 degrees. Combine all ingredients except ketchup and form into a loaf. Spray a loaf pan with non stick spray. Place meatloaf in pan and spread a thin layer of ketchup on top. Cook, covered, for 45 minutes. Remove cover and continue cooking for 30 more minutes.
