Ingredients :

1 Cup All Purpose Flour

2 Tablespoons onion powder

2 Tablespoons garlic powder

1 Teaspoon cayenne

1 Teaspoon salt

½ Teaspoon freshly ground black pepper

4 pork chops bone-in, ¾ inch thick

¼ Cup olive oil

1 Cup chicken broth

½ Cup buttermilk

Chopped fresh flat-leaf parsley, for garnishing

Procedure :

Pour the all purpose flour in a shallow dish.

Add the onion powder, garlic powder, cayenne, salt and pepper. Carefully mix all the ingredients together and mix all well.

Pat dry the pork chops with the use of paper towels to get rid of moisture. Then smother the pork chops with the flavored flour, shake off the excess flour.

Place a large pan or cast iron skillet with olive oil over medium heat. Make sure that the oil is hot enough.

When the oil is hot, lay the pork chops on the pan and fry each side for 3 minutes or until golden brown.

Take out the pork chops from the pan. Sprinkle a little of the flavored flour onto the pan where the pork chops were cooked and mix.

Pour in the chicken broth and let the mixture cook for 5 minutes which will reduce and thicken the sauce slightly.

Add in the buttermilk and blend all the ingredients well together. This will serve as your gravy sauce for the pork chops.

Return then the pork chops and spread the gravy over them. Cook in low heat for another 5 minutes more or until the pork chops are cooked through. Just let the sauce simmer and not boil.

Serve the meal in your favorite serving dish and season more with salt, pepper and chopped parsley.

Tips

  •      In mixing the all purpose flour with the seasonings, use fork to even out the distribution of ingredients.
    
  •      You can double up the sauce if you like a saucy dish
