Rachael Ray 30-Minute Meals Recipe – Potato Dumplings
Ingredients:

4 sweet potatoes - peeled and sliced
-
1 tablespoon EVOO
-
1 large chopped onion
-
1 large, peeled, shredded carrot
-
4 slices of chopped smoky bacon
-
5 sprigs thyme
-
1 bay leaf
-
1 teaspoon grated peel + juice of one orange and 1/8 teaspoon ground cinnamon
-
1 cup sour cream
-
Maple syrup or honey
-
Pepper
Method:
-
Take a large saucepan and add sweet potatoes with sufficient water. Boil it. Salt the water. Cook till tender.

Take a medium pot and heat EVOO.

Add bacon. Cook at medium heat until crisp. Stir often.

Transfer to a plate lined with a paper towel. Keep just 2 tablespoons of bacon fat.

Add carrot, onion, adobo sauce, chipotle pepper, bay leaf, and thyme sprigs. Cook for 5-7 min.

Stir in the orange peel, juice, cinnamon, chicken broth.

Drizzle with honey.

Season with pepper and salt.

Simmer until potatoes get tender.

Add broth mixture to sweet potatoes. Make a puree.

Serve the soup with bacon on top and sour cream.
